Gluten free cheese waffles

It's always so good to have gluten free days. That's cheese waffles recipe is just the right and tasty one for taking a break from gluten👌

But if you want to make the taste even better, you can add 1-2 spoons of gluten free starter, or even change the rules and add a regular starter or its discard.

Crispy outside and tender inside. Cheese, herbs, rice flour, milk. They are good with avocado, salmon, cream cheese or just plain - they always taste great! 

 

Ingredients:


- 150 g rice flour
- 150 g soft cottage cheese (I used Icelandic skyr)
- 150 g grated cheese (I used a mix of goat cheese and gruyere cheese)
- 3 eggs
- 220-230 g of milk
- 30 g of fresh herbs (I used dill, parsley, chives)
- 1/2 tea spoon of salt
- 1 full table spoon of sugar 

You can add 1-2 table spoons of gluten free or wheat starter or its discard to make the taste more interesting and rich. Mix all the ingredients and let it stay for 10 min, then you can start cooking waffles.

 

The dough is not too liquid, don't put all the milk at once, add it to the dough step by step, because we all have different rice flour, let's judge by every singular dough.


If you don't have a waffle maker, you can use a regular pan and bake pancakes. Just add a little bit more rice flour to make the dough thicker, or mix everything with blender: when grated cheese is processed with a blender, the mixture will also become thicker, and after that add all herbs at the very end. 

If you want the waffles to be more spicy, feel free to add any kind of pepper you like, as well as spicy chili flakes😉
