Beautiful cracked chocolate cookies. That’s a heaven for chocoholics))
We need:
🔸Chocolate (56% of cocoa or more) - 175gr
🔹Milk butter - 75 gr
🔸Eggs - 2
🔹Sugar - 120gr
🔸Cake flour - 220gr (or other flour with protein no more than 10,3 gr)
🔹Alkalized cocoa powder - 2 table spoons
🔸Baking powder - 1/2 tea spoon
🔹Salt - 1 pinch
🔸Powdered sugar
🍫I used 56% of cocoa chocolate, you may use more bitter one, but no less than 56% of cocoa, otherwise it will result in the wrong structure of baked cookies.
✅Mix the pieces of chocolate with the cubes of butter, start melting chocolate with butter in the microwave: 15 sec in the microwave - stop and stir, 15 sec - stop and stir. Repeat it until chocolate and butter are fully melted. Let the mixture cool a little bit.
✅Whisk eggs and sugar until fluffy and pale
✅Mix all dry components together (flour, cocoa powder, baking powder, salt)
✅Add melted chocolate to egg and sugar mix
✅Add dry mixture, the consistency you may see in the video ☝️
✅Cover the bowl and put it into the fridge for 2 hours
⏰2 hours have past: make small dough balls 2,5 cm ( 1 inch) in diameter and roll them around in a good amount of powdered sugar ( dough balls should be totally covered with sugar powder, don’t be afraid to add too much powder, in this case the more powdered sugar, the more your cookies will look beautiful😉)
✅Put all the coated dough balls on the parchment, leave enough space between them, cause they will grow in the oven, press them a little bit down with the bottom of a glass, see it on the photo ☝️
🔥Bake at 165 C° h (329 F°) for 10-12 min, no longer, the cookies should be crispy outside with beautiful cracks, but soft and chewy inside. So, don’t overbake them🙏🏻😉
