To tell the truth, I'm not a big fan of a classic tomato sauce for pizzas, that's why I decided to try something new. I've tried several times pies with alfredo sauce, they were great. And this time I decided to add spinach to it: I like how it tastes and how it looks.
I took:
🍃250 g of half and half cream
🍃1 big handful of finely grated gruyere cheese (you can take your favourite white/yellow cheese)
🍃 a little bit of salt, black pepper, a little bit of grated nutmeg
🍃 1 pressed garlic clove
🍃 4 handfuls of fresh baby spinach
Warm up cream in a saucepan almost till boiling, add cheese, salt, pepper, nutmeg and garlic, stir until all cheese melts in the cream. Then add all spinach (you can use a little bit more, judge by the thickness of your sauce, it shouldn't be too liquid) and immediately mix everything with a hand blender until the mixture is even. Do it quickly so the sauce could save its beautiful colour. Taste it: add some more salt if necessary, pepper, sometimes I even add a pinch of sugar to get a good taste balance.
And here it is - so beautiful, bright, tasty sauce full of aromas. Spread it on the dough, bake for 5 min in a preheated oven at its maximum temperature (better on a pizza stone), then add mozzarella slices and bake 5 min more. When it's ready add fresh baby tomatoes, arugula and sprinkle a little bit of olive oil on top. Believe me, it's so good, highly recommended!
